About this deal

I've kept this gluten free brown bread as simple as possible so it's best to bake it up and then enjoy it on the day. I really prefer to do some things very well (a great-tasting, beautiful loaf of bread) rather than try to do everything and do most of it poorly. Usually it's the gluten which makes the dough stretchy, and this is what enables you to knead bread dough.

Yeast bread will rise at a large temperature range, including anything that might be considered room temperature (from warm to cool room temperature), just more slowly at lower temperatures. Until I wrote my third cookbook, Gluten Free on a Shoestring Bakes Bread, batter-style yeast bread was the only sort of gluten free bread recipe I had ever heard of.Ingredients: Flour blend (rice, tapioca, potato, gram, buckwheat, carob), sugar beet fibre, thickener (xanthan gum). That same book also has a simpler recipe for “lean crusty whole grain bread” that also might satisfy her, but you’ll also need some special ingredients. And I don’t want to be told (as recently happened in a Facebook Group) that I’ll ‘get used to it eventually’. I wanted bread rolls for souo so I used a muffin tin mould thoroughly greeced and I got some lovely Diddy rolls for dunking in my soup.

We have improved our popular naturally gluten free Brown Bread Flour blend to give an even better rise and lovelier texture. I’ve been using it for a couple of years along with Shipton Mill, and it works well if you follow the instructions carefully it’s easy.They don't have the yeasty taste that you get from a slow refrigerator rise, and they don't have the same chew. While it does make bakes that look like they should be okay, eating them is a constant disappointment. I feel bad asking… But if you love what I do (or I’ve helped you with your own gluten free journey), I’d be super-grateful. To make the bread, all you need is basic cupboard ingredients such as eggs, milk, oil, normal vinegar and Quick Yeast(yeast also manufactured by Dove's Farm). I also pre mix a little in a bowl first before putting in the breadmake and then put the yeast in the hopper as normal.

In warmer temperatures, this loaf may rise fully in 45 minutes; in cooler, drier temperatures it may take much longer. I have trouble getting it at present time, probably due to driver shortages, etc and was looking for an alternative. This bread will stay fresh covered tightly on the kitchen counter at room temperature for a day, but I wouldn't risk more than that.

This flour allows you to bake fresh, warm brown bread at home - either in the oven or in a bread making machine if you have one. I have tried it once but was missing a couple of ingredients, but I now have everything that I need and am planning to make some later today!

This particular recipe uses a UK brand for Doves Gluten Free Brown Bread Flour (also known by the name Freee), which can be sourced in many supermarkets. You begin baking the bread with the Pullman cover in place to prevent the loaf from rising into a dome, then remove the cover for the remainder of the baking time so the loaf can cook through and brown properly. How many times have I read your “use recipes exactly as written” comments without realising I was using the wrong the critical ingredient. Have found that the brown flour does not make such a light loaf (which I don't mind) - but it often rises excessively around the edges and sinks hugely in the middle, making for a very strangely shaped loaf.
